Bean and rocket salad

 

Ingredients (serves 6)

  • 2 x 300g cans four-bean mix, rinsed and drained
  • 400g can chickpeas, rinsed and drained
  • 250g cherry tomatoes, halved (finely diced up instead, easier to digest)
  • 125g baby rocket (relace with spinach leaves as easier to digiest)
  • 2 tablespoons red wine vinegar
  • 2 teaspoons wholegrain mustard
  • Salt and cracked black pepper

Method

  1. Place the four-bean mix in a large bowl with the chickpeas, cherry tomatoes and rocket.
  2. To make the dressing, place the vinegar,  mustard, salt and pepper in a small bowl and whisk until well combined.
  3. Toss the dressing with the salad and serve immediately.

Notes

  • If not serving immediately, keep the rocket and dressing separate from the rest of the salad then combine just before serving salad.
